This is a wonderful flavorful holiday snack that is very easy to make, full of flavor and completely gluten free. The fresh ahi tuna cubes are enhanced with sesame oil, toasted sesame seeds, scallions that are all blended with a tangy tamari sauce that will have your guests asking for more. I love adding diced Asian pear or juicy Georgia peaches for a slight hint of sweetness. This hordouvres has also become a popular selection for our banquets as well. Each bite packs a wonderful flavor profile that is sure to please your sushi lovers and gluten free guests.

Ingredients

  • ¼ pound diced fresh ahi tuna
  • 3 scallions sliced thin
  • 1 tablespoon, toasted sesame seeds
  • 2 tablespoons, Tamari (Gluten Free Soy sauce)
  • 1 tablespoon sesame oil
  • 1 package gluten free wakame rice crackers.
  • 1 bunch, Greens Do Good microgreens

Step by Step Instructions

    1. In a chilled bowl add the dice ahi tuna.
    2. Sprinkle scallions and toasted sesame seeds on top.
    3. Add the sesame oil and tamari sauce.
    4. Gently fold & mix ingredients together.
    5. Taste for seasoning and add more tamari if more flavor is needed.
    6. Gently spoon mixture on top of wakame cracker.
    7. Garnish with Greens Do Good microgreens and enjoy!

    If you choose to add pears or peaches just peel them, remove the seeds chop and mix all together as procedure instructs then adjust seasoning as needed for a delicious unique variation.
