Ingredients

  • 5 lbs lean ground turkey
  • 3 cups chopped onion
  • 3 cups chopped red bell pepper
  • 3 tbsp minced garlic
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 1 (15 oz) can Great Northern beans, rinsed and drained
  • 1 (12 oz) can tomato juice
  • 1 (6 oz) can tomato paste
  • 1 cup honey
  • 2 tbsp mustard
  • 4 jalapeños, chopped
  • 1 tbsp brown sugar
  • 3 tbsp dried parsley flakes
  • 3 tbsp ground cumin
  • 6 tbsp chili powder
  • Salt and pepper to taste
  • Garnish: Microgreens, shredded cheddar, and chopped scallions

Step by Step Instructions

  • In a saucepan, cook turkey over medium heat until browned, breaking it up as it cooks. Drain excess fat.
  • Add onion and red pepper to the same pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  • Stir in the remaining ingredients. Bring to a boil. Reduce heat, cover, and simmer for about 25 minutes, Adjust seasoning to taste.
  • Garnish with shredded cheddar cheese, microgreens, and chopped scallions. Serve with pita or tortilla chips.
