Ingredients
- 5 lbs lean ground turkey
- 3 cups chopped onion
- 3 cups chopped red bell pepper
- 3 tbsp minced garlic
- 1 (28 oz) can crushed tomatoes
- 1 (15 oz) can kidney beans, rinsed and drained
- 1 (15 oz) can Great Northern beans, rinsed and drained
- 1 (12 oz) can tomato juice
- 1 (6 oz) can tomato paste
- 1 cup honey
- 2 tbsp mustard
- 4 jalapeños, chopped
- 1 tbsp brown sugar
- 3 tbsp dried parsley flakes
- 3 tbsp ground cumin
- 6 tbsp chili powder
- Salt and pepper to taste
- Garnish: Microgreens, shredded cheddar, and chopped scallions
Step by Step Instructions
- In a saucepan, cook turkey over medium heat until browned, breaking it up as it cooks. Drain excess fat.
- Add onion and red pepper to the same pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Stir in the remaining ingredients. Bring to a boil. Reduce heat, cover, and simmer for about 25 minutes, Adjust seasoning to taste.
- Garnish with shredded cheddar cheese, microgreens, and chopped scallions. Serve with pita or tortilla chips.
