Ingredients
For each portion:
- 2 oz smoked salmon
- 1/2 head Greens Do Good butterhead lettuce
- 1 sliced radish
Dressing:
- 1 tbsp plain yogurt or sour cream
- 1/2 tsp minced dill
- 1 tsp lemon juice
- Salt & pepper to taste
Cucumber salad:
- 1/4 cup diced cucumber
- 1 tsp minced red onion or shallot
- 1 tsp minced dill
- 1 tsp lemon juice
- 1 tbsp olive oil
- Salt and pepper to taste
Step by Step Instructions
Dressing:
Combine all ingredients
Cucumber Salad:
Combine all ingredients and let rest for 10 minutes before serving
To plate:
Place the butterhead lettuce at the center of the plate. Lightly dress with the yogurt dressing. Arrange the cucumber salad, salmon, and radish. Garnish with additional herbs as desired
